Banana Bread - Clean & FabulousPreheat oven to 350 degreesAdapted from The Best 100 Vegan Baking Recipes…INGREDIENTS:
1 1/2 cups whole wheat flour
2 tsp corn starch or baking powder
1/2 tsp baking soda
5 ripe bananas
a splash of lemon or lime juice
50 raisins
1/4 cup pure juice (such as pure orange juice)
2 tsp butter lite or alternative
METHOD:
Preheat oven to 350 degrees. Use non-stick spray and coat an 8x8 baking pan (9x5 loaf pan ok too).In a large bowl, combine flour, corn starch or baking powder and baking soda. Using the steel blade in a food processor, process the 5 bananas and lemon/lime juice until smooth. In increments, add the raisins, pure juice, and butter lite/alternative - pulse until well blended.Add the wet ingredients to the dry ingredients and mix until “just combined”.Spread the batter in the pan and bake at 350 for 45 – 50 minutes (or longer due to large quantity of wet mixture), until the bread is golden brown and a toothpick comes out clean. Let cool in the pan for 30 minutes. Run a knife around the edge to loosen and turn bread out of the pan to let cool on a cooling rack. The banana bread will stay moist in sealed container in the fridge.

I can definitely make this tomorrow because I have so many ripe bananas. Delish!!
